Resumen
El uso de plaguicidas viene a ser algo recurrente en la industria agrícola. Por ello, es necesario que existan métodos multirresiduo que nos ofrezcan la posibilidad de analizar los posibles residuos de estos en los alimentos, de una forma rápida y eficaz, para poder corroborar que se respetan los niveles máximos permitidos. En este trabajo se presenta una revisión bibliográfica sobre el análisis de residuos de plaguicidas en aguacate, la aceituna y el aceite de oliva, evaluando el tratamiento de la muestra y los métodos de extracción y detección de residuos de plaguicidas. Se encuentran resultados como el gran uso del método QuEChERS, y modificaciones de este para matrices con alto contenido graso, como método de extracción. Como método de determinación se observa el uso de la cromatografía de gases (GC) y/o cromatografía de líquidos (LC o HPLC) acoplada a la espectrometría de masas en tándem (MS/MS).
