Resumen
En este proyecto de fin de máster se realiza la estimación de la ingesta de
distintos tipos de pescados y productos de mar a través de una encuesta sobre
hábitos dietéticos elaborada con dicho fin. Analizando las respuestas obtenidas se
determinó que el pescado más consumido tanto en la ración pequeña como en la
mediana era el atún enlatado, mientras que para la ración grande fueron las almejas
las que destacaron. Asimismo a partir de los resultados obtenidos mediante la
encuesta y la información proporcionada por la base de datos Ribefood sobre
contaminantes metálicos en alimentos, se estimó la ingesta dietética de algunos
metales pesados como el cadmio, mercurio o plomo en la población objeto de
estudio. Aunque la toxicidad de algunos pescados o productos de mar era algo
elevada, actualmente no existe un peligro excesivo para la sociedad siempre que se
consuman dentro de una dieta equilibrada.
In this final dissertation, an estimation of the intake of different types of fish and sea products is carried out by a survey on dietary habits created for this purpose. Analyzing the answers obtained, it was determined that the fish most consumed in both the small and medium rations was canned tuna, while for the big ration the clams were the most outstanding ones. Also, having into account the results obtained through the survey and the information provided by the Ribefood database on metal contaminants in food, the dietary intake of some heavy metals such as cadmium, mercury or lead in the population under study was analysed. Although the toxicity of some fish or seafood was rather high, that doesn‟t mean a current danger to population as long as they are consumed within a balanced and healthy diet.
