Resumen
En este trabajo se ha estudiado la implantación en bodegas de vino, de un sistema autocontrol basado en el Análisis de Peligros y Puntos de Control Crítico, es decir el sistema APPCC, junto con los Planes Generales de Higiene o Prerrequisitos. El sistema APPCC es una herramienta de autocontrol preventiva y eficaz para mejorar la calidad de los vinos y garantizar su seguridad e inocuidad para los consumidores. Por tanto, se establece un control en todas las etapas del proceso de producción, desde la recepción de la uva hasta que el producto sale de la bodega. Además se trata de un sistema documentado, por el que todas las acciones están por escrito y así todos los datos relativos al proceso se pueden consultar cuando se requiera.
This work has studied the implementation in wine cellars of a self-control system based on Hazard Analysis and Critical Control Points, that is, the HACCP system, together with the General Hygiene Plansor Prerequisites. The HACCP system is a preventive and effective self-monitoring tool to improve the quality of wines and guarantee their quality and safety for consumers. Therefore, control is established at all stages of the production process, from the reception of the grapes until the product leaves the cellar. It is also a documented system, by which all actions are in writing and thus all the data related to the process can be consulted when required.
