Resumen
Todas las personas tienen derecho a consumir alimentos inocuos y que posean
unas garantías de calidad alimentaria. Por esta razón todas las empresas de las
diferentes etapas de la cadena alimentaria deben de cumplir con las normativas
vigentes. Para comprobar que esto es así se desarrollan unos controles oficiales
llevados a cabo por las autoridades competentes. Tradicionalmente estos
controles eran inspecciones muy heterogéneas y que no podían llegar a abarcar
todos los establecimientos que se debían visitar, por eso se homogeneizaron los
criterios, introduciendo la inspección basada en el riesgo. En este trabajo se
describe el procedimiento que se tiene que llevar a cabo para realizar una
inspección basada en el riesgo y qué factores se tienen en cuenta a la hora de
establecer las prioridades de visita.
Food laws establish the right to eat safe foods with quality guarantees for the population. For this reason all companies in the different phases of food chain must comply with the regulations in force. To check that this is the case, there are official controls carried out by the competent authorities. Traditionally these controls were very heterogeneous inspections and could not cover all establishments to be visited, so these methods have been standardised by introducing risk-based inspection. This paper will look at the procedure to be carried out for a risk-based inspection and the factors to be taken into account when establishing visit priorities.
