Resumen
En la presente memoria se recogen las visitas realizadas a las diferentes industrias
alimentarias con el fin de conocer los controles oficiales que llevan a cabo los agentes
de control del Distrito Sanitario de Jaén. Las visitas se realizaron en base a los diferentes
planes de la Junta de Andalucía como son el Plan de Inspección Basado en el Riesgo, el
Plan de Supervisión de los Sistemas de Autocontrol, el Plan de Muestreo de Peligros
Biológicos, entre otros. Se incluye el proceso de elaboración de los distintos productos,
así como el procedimiento de verificación seguido en cada una de las industrias
alimentarias, acompañado de la normativa correspondiente.
In this work, the inspections and supervisions conducted in different food industries are described with the purpose of knowing the official controls that carry out the agents of the Sanitary District of Jaén. The visits were made based on the different plans established by the autonomous government, the Junta de Andalucía, such as the Risk-Based Inspection Plan, the Supervision Plan of the Self-Control Systems or the Biological Hazard Sampling Plan, among others. This report includes the process of elaboration of the different food products, as well as the verification procedure followed in each of the food industries, accompanied by the corresponding regulations or governing laws.
