The completion of this Final Degree Project consists of studying the evolution of the Extra Virgin Olive Oil Consumption in Andalusia, through an econometric model, which is formed by a series of macroeconomic variables such as: Average Price, Penetration and Index of Consumer Prices (CPI). In the first place, the necessary data must be collected to be able to carry out our study and from there be able to build the econometric model, focusing it on the period of time of the study, which ranges from January 2010 to December 2019. In the model, all the variables that we have chosen can be reflected, although they do not all have to be useful and we will decide if it remains in the model or on the contrary, we will eliminate them until we are able to determine a model that describes closely to reality, which fulfill all the basic hypotheses, by applying the different phases of the econometric method. Finally, conclusions are drawn in which the results obtained in the analysis are detailed and interpreted.
