ANÁLISIS GENERAL DEL PROCESO DEL ACEITE. CASO ESPECÍFICO DE ACEITES GUADALQUIVIR, S.C.A

Abstract

[ES]El trabajo consta de tres partes claramente definidas, las dos primeras tratan de la historia del aceite en España en los siglos XVI, XVII y XVIII donde se puede ver el uso de éste en las culturas ancestrales y cómo se recolectaba el fruto antes de su proceso de transformación, la segunda trata del proceso de producción y distribución viendo como la aceituna atraviesa por todas las partes de la cadena de valor incrementado el precio del óleo hasta que se distribuye por la distintas superficies de venta. La última parte se centra el caso específico de la cooperativa Aceites Guadalquivir S.C.A empezando por una breve introducción de cómo se fundó, seguido de la estructura organizativa de la entidad al igual de los socios que la compone, posteriormente vamos a hablar de la producción y facturación de ventas de la sociedad, acabando con los prestigiosos premios que esta tiene en los diferentes países.

[EN]The work consists of three clearly definite parts, both first ones they treat of the history of the oil in Spain in the XVIth, XVIIth and XVIIIth century where it is possible to see the use of this one in the ancient cultures and since the fruit was gathered before his process of transformation, the second one it treats of the process of production and distribution seeing as the olive it crosses on all the parts of the chain of increased value the price of the oil until different surfaces of sale are distributed for. The last part centres on the specific case of the cooperative Oil The Guadalquivir S.C.A beginning for a brief introduction of how it was founded, followed by the organizational structure of the entity to the equal one of the partners that composes it, later we are going to speak about the production and turnover of sales of the company, finishing with the prestigious prizes that this one has in the different countries.
