Resumen
[ES] Este trabajo Fin de Máster titulado, “Principales Normas de Seguridad
Alimentaria, para la exportación de aceite de oliva virgen” con carácter
profesional, ha sido realizado en la Sociedad Cooperativa Andaluza Oleocampo,
ubicada en Torredelcampo, Jaén. La actividad profesional ha sido desempeñada en
el departamento de Calidad y Seguridad Alimentaria de la empresa, por ello, se ha
requerido inicialmente de un periodo de formación sobre las principales normativas
de seguridad alimentaria y gestión de la calidad implantadas en las empresas
alimentarias destacando, British Retail Consortium (BRC), International Food
standard (IFS), ISO 22000 y la nueva ley de Modernización de Inocuidad de los
Alimentos (FSMA).
[EN] The following Master’s Thesis, entitled “Main Standards of Food Safety, to export Virgin Olive Oil” has been carried out in collaboration with a company belonging to the olive oil sector called, Oleocampo SCA, located in Torredelcampo-Jaén. The activity has been carried out in the area of Quality and Food Safety of the company. Therefore, it has been necessary a period of training in the main regulations of Food Safety and Quality management implemented in food industry, like; British Food Consortium (BRC), International Food Standard (IFS), ISO 22000 and the new Food Safety Modernization Act (FSMA).
