ESTUDIO DEL CONOCIMIENTO SOBRE ACEITES DE OLIVA EN LA PROVINCIA DE JAÉN

Abstract

[ES]El objetivo principal de la investigación es averiguar el conocimiento sobre aceites de oliva de los consumidores de la provincia de Jaén y arrojar luz sobre el comportamiento del consumidor en los mercados del aceite de oliva, aspecto esencial para mantener la sostenibilidad de la economía del sector oleícola. La metodología llevada a cabo ha consistido en un cuestionario realizado de forma online y presencial, donde se trata el conocimiento que tiene el consumidor (conocimiento objetivo), el conocimiento que cree que tiene (conocimiento subjetivo) y la relación del conocimiento objetivo con el comportamiento y hábitos de compra. Tras realizar el análisis de los resultados, y comprobar si el conocimiento está influenciado por determinadas variables sociodemográficas, se concluye que existe un gran desconocimiento del aceite de oliva a pesar de que los consumidores de la provincia de Jaén lo consideran como uno de los ingredientes más importantes.[EN]The main purpose of the research is find out the knowledge about olive oils by consumers in the province of Jaen and shed some light on the consumer behaviour in olive oils markets, an essential aspect to maintain the sustainability of the economy in the olive-oil sector. The methodology carried out has consisted of online and face-to-face questionnaires, which deals with the knowledge that the consumer has (objective knowledge), the knowledge that he believes he has (subjective knowledge) and the relationship of objective knowledge with behaviour and buying habits. After analyzing the results and checking if the knowledge is influenced by certain sociodemographic variables, it is concluded that there is a great ignorance of olive oil despite the fact that consumers in the province of Jaen consider it as one of the most important ingredients.
