Resumen
[ES] El presente Trabajo Fin de Máster recoge y desarrolla todos aquellos puntos y contenidos necesarios que se han de
seguir para la realización de un plan de empresa, que en este caso será un restaurante de alimentación vegana en
Úbeda (Jaén). Con la apertura de este negocio se busca cubrir la demanda de este tipo de alimentación, pues no hay
ningún restaurante en la ciudad que la oferte como tal. En primer lugar, se desarrolla una breve introducción que
explica los contenidos de este trabajo y se realiza una descripción del proyecto, la idea de negocio, la misión, la
visión y los objetivos. En segundo lugar, se realiza un análisis del entorno general a través del análisis PESTEL y un
análisis del entorno específico a través del modelo de Porter. También, se realiza un análisis DAFO en el que se
detectarán las oportunidades, amenazas, fortalezas y debilidades que tiene la empresa, y se analizará el mercado
objetivo. A continuación se desarrolla la estrategia competitiva que va a desarrollar la empresa, se realizará el plan
de marketing, el plan de operaciones, el plan de recursos humanos y se elegirá la forma jurídica de la empresa. Por
último, se realizará el plan económico-financiero y se expondrán las conclusiones del plan de empresa.
[EN] The present Final Master Project collects and develops all those points and necessary contents that must be followed for the realization of a business plan, which in this case will be a vegan food restaurant in Úbeda (Jaén). With the opening of this business, we seek to cover the demand for this type of food, since there is no restaurant in the city that offers itas such. In the first place, a brief introduction is developed explaining the contents of this work and a description of the project, the business idea, the mission, the vision and the objective. Secondly, an analysis of the general environment is carried out through the PESTEL analysis and a specific environment analysis through the Porter model. Also, a SWOT analysis is carried out in which the opportunities, threats, strengths and weaknesses that the company has will be detected, and the target market will be analyzed. Next, the competitive strategy developed by the company will be developed, the marketing plan, the operations plan, the human resources plan will be carried out and the legal form of the company will be chosen. Finally, the economic-financial plan will be carried out and the conclusions of the business plan will be presented.
