Nowadays, the imminent pollution that surrounds us and its consequences have motivated interest in the study of new forms of energy to replace the conventional way of generating it, generally by means of fossil fuels. Added to this fact is the notable increase in price, which is rising every day due to the geopolitical situation, among many other causes. For this reason, this final degree project seeks a sustainable alternative using solar energy through the installation of self-consumption photovoltaic systems in olive oil mills, so that they become self-sufficient in energy consumption. MatLab is used as a tool to obtain self-consumption and self-sufficiency curves. With these curves, the dimensional evaluation of the photovoltaic generator required in the case of two olive oil mills of different sizes is carried out.
