Determinación de la susceptibilidad a antibióticos y biocidas de cepas de Escherichia coli aisladas de superficies de un matadero.

Resumen
[ES] La resistencia a los antimicrobianos es un problema mundial que afecta al hombre y también a los animales, que está derivado del mal uso de éstos. Dada la preocupación actual que existe por este tema nos pareció interesante determinar si existían resistencias a diferentes antimicrobianos a lo largo de la cadena de la producción de carne trabajando con cepas de Escherichia co/i aisladas de diferentes zonas de un matadero de Jaén. Los resultados mostraron que efectivamente como se preveía existía una gran cantidad de resistencias y además obtuvimos otros datos importantes como la resistencia que mostró una cepa de f. coli aislada de la Sala Blanca, uno de los últimos lugares por donde pasa la carne antes de llegar al consumidor, a la mayoría de los antimicrobianos empleados. Por otro lado, el Cloruro de Benzalconio resultó ineficaz frente a todas las cepas aisladas.
[EN] Resistance to antimicrobials is a global problem that affects men and also animals, which is derived from the misuse of these. Given the current concern about this issue, we found it interesting to determine if there were resistances to different antimicrobials a long the cha in of meat production working with strains of Escherichia co/i isolated from different areas of a slaughterhouse in Jaén. The results showed that, as expected, there was a large amount of resistances and moreover we got other important data such as the resistance shown by an f. coli strain isolated from the White Room, one of the last zones where the meat product passes befare arriving to the consumer, to the majority of the antimicrobial agents used. On the other hand, Benzalkonium Chloride was ineffective against ali the isolated strains.
