Resumen
En el presente trabajo de fin de grado expondremos una visión
global sobre la producción y comercialización de un importante
producto agroalimentario para la economía y sociedad española,
como es el aceite de oliva. Comenzaremos definiendo conceptos
claves para una mayor comprensión de esta materia: tipologías de
los aceites de oliva, el olivar del que proviene, formas de cultivo y
sus costes, denominaciones de origen presentes en la provincia
jiennense, así como la cadena de valor que rodea al sector
oleícola, centrándonos en la clasificación de las entidades
productoras. Posteriormente, estudiaremos la forma de
comercialización de los aceites de oliva de forma global en
nuestro país, aportando datos sobre la producción, exportación e
importación de aceite durante las últimas campañas. Por último,
nos centraremos en la localidad jiennense de Mancha Real, donde
realizaremos un pormenorizado estudio sobre cuatro entidades
productoras de aceites de oliva.
In the following final-degree project we will present an overview of the production and marketing of olive oil, an important agri- food product for the Spanish economy and society. We will begin by defining key concepts for a better understanding of this subject: types of olive oil, the olive grove from which it comes, forms of cultivation and their costs, designations of origin present in the province of Jaén, as well as the value chain that surrounds the olive oil sector, focusing on the classification of the producing entities. Subsequently, we will study the way olive oil is marketed globally in our country, providing data about the production, export and import of oil during the last campaigns. Finally, we will focus on the town of Mancha Rea, Jaén, where we will carry out a detailed study of four olive oil-producing entities.
