¿Cómo reducir el desperdicio de alimentos de manera sostenible en la cadena de suministro? Una revisión bibliográfica

Abstract

(ES)El desperdicio de alimentos es un problema global de gran magnitud que impacta negativamente en el medio ambiente y la seguridad alimentaria. Esta investigación se propone analizar las causas y consecuencias de este fenómeno en la cadena de suministro española, con el objetivo de identificar estrategias sostenibles para reducirlo. Para ello, se realizará una revisión exhaustiva de la literatura existente y se analizarán datos relevantes. Los resultados de este estudio permitirán comprender mejor la problemática y proponer recomendaciones concretas para la implementación de políticas públicas y estrategias privadas orientadas a reducir el desperdicio de alimentos, considerando el desarrollo territorial y el bienestar social. En última instancia, esta investigación busca contribuir a un futuro más sostenible y equitativo, donde se optimice el uso de los recursos alimentarios y se garantice el acceso a alimentos saludables para todos.(EN)Food waste is a major global problem that negatively impacts the environment and food safety. This research aims to analyse the causes and consequences of this phenomenon in the Spanish supply chain, with the aim of identifying sustainable strategies to reduce it. With that aim, an exhaustive review of the existing literature will be carried out and relevant data will be analysed. The results of this study will allow a better understanding of the problem and propose concrete recommendations for the implementation of public policies and private strategies aimed at reducing food waste, considering territorial development and social well-being. Ultimately, this research seeks to contribute to a more sustainable and equitable future, where the use of food resources is optimised and access to healthy food is guaranteed for all.
