El presente Trabajo Fin de Grado tiene un doble objetivo. Por un lado, se analiza el grado de conocimiento que tienen las personas sobre los aceites de oliva, en este caso los/as socios/as de “OLEOCAMPO” S.C.A. Para ello, se ha realizado una encuesta a 50 personas a las que se han interrogado sobre un total de 20 ítem. Los resultados han sido útiles para tener una orientación sobre el nivel de conocimiento que tienen dichas personas sobre los aceites de oliva, así como si este conocimiento está influido por determinadas variables socio demográficas. Los resultados muestran que el conocimiento que poseen es moderado.
Por otro lado, se ha estudiado también los distintos signos de diferenciación de aceites de oliva, tales como premium, cosecha temprana, ecológico, olivares vivos o Indicación Geográfica Protegida –IGP- se asocian más o menos con atributos determinantes para la compra como son la salud, la calidad, la posibilidad de conquista de mercados, el precio, la biodiversidad y el cuidado medioambiental. Los resultados muestran un distinto posicionamiento de estos signos de diferenciación en función de los atributos.
