Resumen
[ES]El compuesto polifenólico conocido como quercetina (1) (2-(3,4-dihidroxifenil)-3,5,7-trihidoxi-4H-cromen-4-ona) es un metabolito secundario que se ha identificado en plantas y numerosos alimentos, especialmente en frutas y verduras, el cual pertenece a la familia de productos naturales denominada flavonoides. Dado el interés científico y comercial de la quercetina y sus derivados, en este Trabajo Fin de Grado se aborda el estudio de la reactividad de quercetina, llevándose a cabo, en concreto, reacciones de protección de los hidroxilos fenólicos y reacciones de reducción en el anillo C. Se han preparado tres derivados de quercetina: 3,7,3',4'-tetra-O-metilquercetina (2) 3,5,7,3',4'-penta-O-bencilquercetina (3) y 3,7,3`,4`-tetra-O-bencilquercetina (4), mediante reacciones de metilación y bencilación. En las reacciones de reducción de 1 con H2 y catalizadores de Pd se obtuvo y caracterizó mediante RMN-1H, RMN-13C y RMN-2D un dímero (6), para el que se propone un posible mecanismo de formación.
[EN]The polyphenol compound named mercetin (1) (2-(3,4-dinydroxyphenyl)-3,5,7-trihydroxy-4H-dhromen-4-one) is a secondary plant metabolite of the flavonoids family, which is present in a wide variety of food, and especially in fruit and vegetables. Due to the high scientific and commercial value of quercetin derivates, in this work the study of quercetin reactivity, with reactions of protection forhydroxyl group and reduction of the C ring, has been deeloped. Three quercetin derivatives have been synthetized using methylation and benzylation reactions: 3,7,3`,4`-tetra-O-methylquercetin (2), 3,5,6,3',4'-penta-O-benzylquercetin (3), and 3,7,3',4'-tetra-O-benzylquercetin (4).The reduction of quercetin derivates with H2 and palladium catalysts have been carried out, the dimeric compound 6 being isolated and characterized by 1H NMR, 13C NMR and 2D NMR. A proposed mechanism for the systhesis of 6 is shown.
