Determinación y estudio de residuos de contaminantes inorgánicos en alimentos de origen vegetal

Resumen
[ES]Una de las aplicaciones del análisis de trazas inorgánico es la detección de metales pesados en alimentos. En este trabajo, se ha realizado la determinación de trazas de los metales tóxicos arsénico, cadmio zinc y plomo en 16 muestras de arroz de marcas comercializadas en España para determinar si cumplen los límites establecidos por la normativa. El método empleado consiste en una digestión ácida acelerada con microondas, usando ácido nítrico y peróxido de hidrógeno seguida de la determinación mediante Espectrometría de Masas con Plasma Acoplado Inductivamente (ICP-MS), dado que permite unos límites de detección del orden de ng/kg a µg/kg dependiendo del analito. Al mismo tiempo, se ha llevado a cabo un estudio para evaluar el porcentaje de eliminación del arsénico durante su procesado normal en una cocina durante la etapa de cocción para estimar que porcentaje de arsénico se mantiene en el arroz que se consume.

Furthermore, in arder to evaluate the arsenic removal during standard cooking (boiling), the study of processing factor of arsenic was also undertaken.
