VIABILIDAD TÉCNICO-ECONÓMICA DE LA CREACIÓN DE UNA PLANTA DE COMPOSTAJE DE ALPEORUJO Y CARACTERIZACIÓN DEL PROCESO DE PRODUCCIÓN DEL COMPOST DE ALPEORUJO DE LA PROVINCIA DE JAÉN

Abstract

[ES] El compostaje del alpeorujo es uno de los posibles destinos del alpeorujo, principal subproducto/residuo de las almazaras. Con este destino, la almazara convierte un subproducto en un recurso rico en materia orgánica y, por tanto, se hace autosuficiente en la gestión de este subproducto y los olivareros obtienen un beneficio al reducir la factura de fertilizantes químicos de síntesis y enriquecer de materia orgánica el suelo. A pesar de estos beneficios, el número de plantas de compostaje de alpeorujo asociadas a las almazaras es muy reducido. El presente trabajo fin de Máster trata de contribuir a potenciar la construcción de plantas de compostaje al examinar la viabilidad técnica y económica de una planta de compostaje de tamaño medio-grande para solucionar los problemas generados por la sustitución del sistema de extracción de aceite de oliva de tres fases a dos fases y, al mismo tiempo, contribuir a la aplicación de materia orgánica en los suelos de olivar, caracterizados por bajos niveles de materia orgánica. Asimismo, se realizó una encuesta a olivareros del municipio de Villacarrillo para conocer el grado de conocimiento del alpeorujo compostado, el grado de aceptación y los beneficios ligados a su aporte en el suelo. Tanto la viabilidad técnica como económica de la construcción de una planta de compostaje son positivos con tiempo de amortización muy bajo. Por otra parte, el grado de conocimiento del alpeorujo de compostaje es escaso-muy bajo por lo que se sugieren campañas informativas.

[EN] The composting of the olive mill pomace (alpeorujo) is one of the possible fates of the alpeorujo, main by-product/residue of the olive mills. With this fate, the alpeorujo is transformed from a by-product to a resource rich in organic matter and, therefore, becomes the olive mill industry (almazara) is self-sufficient in the management of this by-product, and at the same time the olive growers obtain a benefit by reducing the invoice of chemical fertilizers synthesis and enriching of organic matter the soil. In spite of these benefits, the number of composting plants of alpeorujo associated to the olive mills is very reduced. The aim of this Master's thesis is to contribute to strengthening the construction of composting plants by examining the technical and economic viability of a medium-large composting plant, to solve the problems generated by the replacement of the olive oil extraction system of three phases to two phases and, at the same time, to promote the application of organic matter in the soils of olive grove, already characterized by low levels of organic matter. In addition, a survey was carried out on olive growers of the municipality of Villacarrillo to know the degree of knowledge about composted olive mill pomace, the degree of acceptance and the benefits linked to its application in the soil. Both the technical and economic viability of the construction of a composting plant are positive with very low amortization time. On the other hand, the degree of knowledge of the composting alpeorujo is scarce-very low, so information campaigns are suggested.
