Resumen
En el presente trabajo se pretende realizar un estudio de la evolución a lo largo de la campaña de
recolección 2021-2022 de algunos de los ácidos grasos. La finalidad es comprobar si verdaderamente
estos ácidos, en la práctica, cumplen la evolución indicada teóricamente.
El motivo por el que se ha escogido la temática de este trabajo surge a raíz de la certificación por la
IGP Aceite de Jaén, en la cooperativa donde se ha realizado este ensayo. Ya que, a pesar de ser los
primeros en certificar en la provincia por este sello de calidad, muchos aceites tempranos quedaron
excluidos. Todos ellos coincidieron en el incumplimiento del resultado de un parámetro: el ácido
palmítico, ya que los % eran muy altos, por tanto, quedaba fuera del rango establecido por el pliego de
condiciones.
The aim of this work is to study the evolution of some of the fatty acids throughout the 2021-2022 collection campaign. The aim is to check whether these acids, in practice, comply with the theoretically evolution indicated. The reason for choosing the subject of this work arose because of the certification by the PGI “Aceite de Jaén”, in the cooperative where this trial was carried out. Despite being the first to be certified by this quality seal in the province, many early oils were excluded. All of them coincided in the non- compliance of the result of a parameter: palmitic acid, since the % were very high, therefore, it was outside the range established by the specifications.
