Resumen
[ES] La espirulina es una microalga del tipo cianobacteria caracterizada por su alta concentración en micronutrientes y mactronutrientes. Se considera el alimento del futuro debido a su extraordinario contenido nutricional y sus múltiples propiedades beneficiosas para la salud. Esta alga se compone de vitaminas, ácidos grasos, minerales, carbohidratos, ácidos nucleicos, pigmentos y, sobre todo, de un alto porcentaje de proteínas. Dependiendo de las condiciones ambientales y del entorno en el que crezca, puede contener diferentes concentraciones de metales pesados, debido a que la espirulina tiene un gran poder absorbente. Por lo tanto, es necesario disponer de métodos de análisis eficaces para asegurar que el consumo de esta alga es seguro. Por ese motivo, en este Trabajo Fin de Grado se lleva a cabo una revisión de los métodos de análisis para la determinación de metales en espirulina.
[EN] Spirulina is a microalgae of the cyanobacteria type characterized by its high concentration in micronutrients and macronutrients. It's considered the food of the future due to its extraordinary nutritional content and its multiple beneficial properties for health. This alga consists of vitamins, fatty accids, minerals, carbohydrates, nucleic acids, pigments and, particularly, a high percentage of proteins. Depending on the environmental conditions and the environment in which it grows, it has different concentrations of heavy metals due to its high absorbent capacity. Hence, it is important to have at hand efficient analytical methods to ensure the safety of its consumption. In this Work, the analytical methods for the determination of metals in spirulina have been reviewed.
