[ES] Los pesticidas son sustancias que se agregan o añaden a los cultivos para evitar la proliferación de otros seres vivos, como hongos, insectos u otras hierbas indeseadas, que pueden perjudicar la cosecha y provocar grandes pérdidas económicas. Por ello, este trabajo se centra en métodos de análisis para determinar la presencia de pesticidas en alimentos, ya que estos están fuertemente regulados y solo se permiten en cantidades mínimas. Recientemente, se ha reportado el problema del uso de pesticidas de alta polaridad, como el glifosato, que presentan una serie de inconvenientes, como su alta solubilidad en disolventes polares, como el agua, lo que puede dificultar su extracción y determinación. Debido a esto, se desarrollarán una serie de tratamientos previos al análisis de las muestras para obtener resultados óptimos, así como métodos de análisis adaptados a estos analitos polares para evitar los múltiples problemas que pueden surgir.
[EN] Pesticides are substances that are added or applied to crops to prevent the proliferation of other living beings, such as fungi, insects, or unwanted weeds, which could harm the harvest and result in significant financial losses. For this reason, this work focuses on analysis methods for the determination of pesticides in foods, as they are closely monitored and only permitted in minimal quantities. Pesticides can be classified as polar or non-polar, but there are issues with the analysis of highly polar pesticides, such as their high solubility in polar solvents like water, which can hinder their extraction and determination. Consequently, a series of sample treatments have been developed prior to analysis to achieve optimal results, as well as analytical methods adapted to these polar analytes to overcome several analytical issues.
