These crops are often subjected to salt stress due to poor agricultural practices and irrigation with suboptimal water. We must understand the response of plants, as well as the mechanisms of salt tolerance, this is imperative for proper planning and management of olive orchards. This review paper attempts to give a complete scientific overview of the available literature on the physiological aspects of the olive tree in response to salinity. The olive tree will be affected more or less, depending on the cultivar. Through different adaptive strategies it fights soil salinity, but it needs help, new techniques and tools that allow a better adaptation to saline soils and higher production
