[ES]La agroindustria del aguacate genera un 30% de subproductos de desecho aproximadamente 200 toneladas que se convierten en
un problema ecológico. El hueso es una fuente importante de compuestos fenólicos de gran interés por su capacidad antioxidante.
El objetivo está enfocado en el aprovechamiento mediante extracción de compuestos fenólicos del hueso de aguacate tipo Hass
subproducto de la agroindustria del guacamole. Se han ensayado métodos modificando la temperatura y tiempo de exposición,
además de diferentes tipos de solventes lo que ha permitido determinar las mejores condiciones de extracción. Los mejores
resultados se obtuvieron empleando como disolvente agua y etanol–agua al 50% el menor tiempo de exposición y la temperatura
más alta ensayada, 1,95 mg/g y 4,32 mg/g respectivamente. Con una mezcla acetona–agua 50% los mejores resultados se
obtuvieron al mayor tiempo de exposición y la menor temperatura, 4,54 mg/g.

Bone is an important source of phenolic compounds of great interest due to its antioxidant capacity. The objective is focused on the use by extraction of phenolic compounds from Hass-type avocado pit, a by-product of the guacamole agro-industry. Different methods have been tested by modifying the temperature and exposition time, in addition to different types of solvents, which has made it possible to determine best extraction conditions. The best results obtained using water and 50% ethanol-water as solvent were the shortest exposure time and the highest temperature tested, 1.95 mg/g and 4.32 mg/g respectively. With a 50% acetone-water mixture, the best results were obtained at the longest exposure time and the lowest temperature, 4.54 mg/g.
