Resumen
[ES]El trabajo tiene como objetivo partir del análisis general del sector del aceite de oliva de la provincia de Jaén, para descender al estudio y análisis de costes de la cooperativa “Santa Águeda” de Sorihuela del Guadalimar, (Jaén). Comentamos la historia y situación actual de la empresa, analizamos la situación del sector oleícola, mediante el análisis DAFO, recurso para detectar las debilidades, amenazas, fortalezas y oportunidades del sector. La parte central de este TFG es el análisis de costes de la empresa, de acuerdo con el modelo de costes completos históricos. Los datos han sido facilitados por la cooperativa y hacen referencia a la campaña 2015 y abril de 2016. El trabajo finaliza con un resumen de las principales conclusiones que pueden extraerse de los resultados obtenidos, así como con la relación de fuentes bibliográficas y de información empleadas.
[EN]The main objective of this TFG is to analyze the olive oil sector in the province of Jaén, in order to go down to the study and cost analysis of “Santa Águeda" cooperative, located in Sorihuela del Guadalimar, (Jaén).
