Resumen
Los glicoalcaloides son compuestos químicos que se encuentran naturalmente en plantas de la familia de las solanáceas, como las patatas, los tomates y las berenjenas. Son parte de los mecanismos de defensa de las plantas contra plagas y enfermedades. El consumo de la patata ha aumentado exponencialmente en los últimos años, debido a que es un alimento asequible, versátil y fácil de cocinar. Sin embargo, contiene un alto contenido en glicoalcaloides, provocando malestar intestinal, vómitos, diarrea...o, en casos extremos, parálisis, coma o incluso la muerte. Este trabajo de Fin de Grado se centra en la α-solanina, un tipo de glicoalcaloide que sirve como defensa ante el ataque de hongos, insectos o bichos aunque, tal y como se ha comentado anteriormente, tiene efectos dañinos si se encuentra a altas concentraciones. En este trabajo se van a estudiar los diferentes métodos de análisis de la α-solanina en patata que se han encontrado en bibliografía en las dos últimas décadas.
Glycoalkaloids are chemical compounds found naturally in plants of the Solanaceae family, such as potatoes, tomatoes, and eggplants. They are part of plants ́ defense mechanisms against pests and diseases. Potato consumption has increased exponentially in recent years because it is affordable, versatile, and easy to cook. However, it contains a high content of glycoalkaloids, causing intestinal discomfort, vomiting, diarrea... or, in extreme cases, paralysis, coma, or even death. This final degree project focuses on α- solanine, a type of glycoalkaloid that serves as a defense against attacks from fungi, insects, or bugs. However, as previously mentioned, it has harmful effects if found at high concentrations. This project will study the different methods of analyzing α-solanine in potatoes that have been found in the literature in the last two decades.
