Resumen
[ES] Bajo el título "Mecanismos de control de calidad en una empresa aceitunera (Aceitunera Jiennense)", el presente Trabajo de Fin de Máster pretende dar a conocer qué es la calidad desde sus inicios hasta la actualidad. En él podemos encontrar diferentes formas de definir la calidad, criterios a tener en cuenta y cómo se lleva a cabo su gestión en una empresa.
Para ello, se describe cómo se aplica la calidad en el sector de la industria alimentaria centrándose en una empresa aceitunera como es Aceitunera Jiennense. A continuación, se muestran los diferentes tipos de aceitunas, su reglamentación y cada una de las etapas.
Para finalizar, es importante ver en detalle cómo se lleva a cabo la gestión de la calidad mediante el sistema de autocontrol específico de la empresa con las actividades que se desarrollan en él.
[EN] Under the title "Quality control mechanisms in an olive company (Aceitunera Jiennense)", this Master's Thesis aims to show what quality is, from its beginnings to the present. We can find different ways of defining quality, criteria that must be taken into account and how its management is carried out in a company. The way in which quality is applied in the sector of the food industry is described, focusing on an olive company as it is Aceitunera Jiennense. Also, the different types of olives, their regulation and the different stages in the production are shown. Finally, it is important to see in detail how quality management is carried out by mea ns of the company's specific self-control system and the activities that are developed in this scope.
