Resumen
[ES] La microbiología de los alimentos se ocupa de la presencia, origen y clasificación de los microorganismos. La proliferación de la microbiota contaminante de los alimentos depende de las condiciones de almacenamiento y conservación de los mismos. Dentro de las enfermedades transmitidas por alimentos el pescado juega un papel muy importante ya que es uno de los alimentos más consumidos en todo el mundo. Además el pescado tiene una importante microbiota debido a su
composición química y a la reacción poco ácida de su carne, lo cual le hace ser un alimento altamente perecedero. En este ensayo se intenta detectar la presencia de estas bacterias mediante la realización de
diferentes estudios para conocer la carga microbiana ya que han sido comprados en diferentes supermercados y en distintos tiempos. Los datos dieron como resultado que la carga microbiana de pescados de grandes superficies era ligeramente más elevada que la de pequeños comercios.
[EN] The microbiology of food deals with the presence, origin and classification of microorganisms. The proliferation of contaminating food microbiota depends on the conditions of storage and conservation. Within the foodborne diseases, fish plays a very important role since it is one of the most consumed foods in the world. In addition, fish has an important microbiota due to its chemical composition and the low acidity of its meat, which makes it a highly perishable food. In this test we try to detect the presence of these bacteria by carrying out different studies to know the microbial load since they have been bought in different supermarkets and at different times. The data showed that the microbial load of large fish was slightly higher than that of small businesses.
