EL COMPORTAMIENTO DEL CONSUMIDOR DE ACEITES DE OLIVA EN BRASIL

Resumen
[ES] Brasil es un país característico por la mezcla de distintas etnias en su
formación, en especial los nativos, los africanos y los europeos. A pesar de su gran
contingente poblacional su consumo de aceites de oliva es todavía muy bajo,
aunque el producto no es totalmente desconocido. Este trabajo tiene como objetivo
medir este conocimiento por parte del consumidor, analizar los principales usos de
las grasas y aceites en Brasil, cuáles son los principales factores que el brasileño
lleva en cuenta en el momento de la compra, cuales países tienen mejor y peor
imagen para él y por fin saber si hay alguna relación entre la ascendencia de los
consumidores y los aspectos citados. Por medio de una encuesta en línea con
alcance nacional se buscaron datos para responder a estas cuestiones. En general
el conocimiento del brasileño es mediano, hay una gran confusión en su mente
cuanto a nomenclatura y características. Además en Brasil cada aceite y grasa tiene
usos más o menos bien definidos. Los principales factores que se llevan en cuenta
son las características físico-químicas del producto (sabor, variedad, etc.), las
marcas y el precio. Finalmente, no se aprecian fuertes diferencias entre grupos
étnicos en relación a conocimiento y uso de los aceites de oliva.
[EN] Brazil is a country characterized by the mixture of different ethnic groups. For example, Brazilian Natives, African-European descendants. Despite its large population, olive oil consumption is very low, although the product is not totally unknown. The aim of this project was to measure the consumer’s knowledge, analyze the uses Brazilians give to different fats and olive oils, find out what are the main factors Brazilians take into account at the time of purchase, determine which countries have good or bad image from a consumer’s perspective, and determine if there is any relationship between ancestry and the mentioned aspects. An online survey with national outreach was developed to answer these questions. The results show that Brazilian knowledge of fats and olive oils is not absent but it’s not rich. There is a great confusion regarding nomenclature and characteristics of the different oils. People from Brazil also have more or less well defined uses of different fats and oils. The main factors taken into consideration are the physical and chemical characteristics of the products (flavour, variety, etc.) brands and prices. There were no significant differences between ethnic groups regarding knowledge and uses of olive oils.
