Los principales hitos históricos en la definición de la bioquímica como área de conocimiento bisagra entre las Ciencias Químicas y Biológicas sirven de marco epistemológico para encuadrar el estudio de las proteínas como contenido de una unidad didáctica dirigida a alumnos de Biología de 2º de Bachillerato: "Moléculas orgánicas: Las proteínas. Desde el laboratorio de Bioquímica al aula de Biología de Bachillerato". Entre otros recursos didácticos se ha utilizado, por un lado, el potencial de la temática en la interacción Ciencia-Tecnología y Sociedad (CTS) promoviendo el debate y reflexión crítica del alumnado sobre la base del conocimiento científico y, por otro, el trabajo de laboratorio. Sin perjuicio todo ello de restar tiempo a la preparación del alumno para responder con garantías de éxito a las preguntas que sobre la temática se le planteen en la prueba de acceso a la Universidad, y sobre las que incorporo un breve estudio en la introducción a la unidad didáctica.
Este trabajo está dirigido para realizar un estudio de la bioquímica, desde los primeros avances y descubrimientos en el siglo XIX hasta los últimos avances del siglo XXI. También se introduce una interacción CTS que se trata de la dieta hiperproteica Dukan, a partir de la cual podremos saber las ventajas y desventajas que ésta presenta dando lugar a un debate donde cada alumno expondrá sus propias conclusiones. En esta unidad didáctica podremos introducirnos en el laboratorio para aprender cómo se desnaturaliza una proteína, ya que es un experimento sencillo e interesante, de forma que el alumno no encuentre este tema en concreto ni la ciencia en general como algo abstracto. Por último finalizaremos con la realización de una unidad didáctica en donde se pretende que los alumnos conozcan los conocimientos necesarios exigidos en las pruebas PAU y su importancia en la vida cotidiana.
Major milestones in the definition of biochemical and hinge area knowledge between Chemical and Biological Sciences serve epistemological framework to frame the study of proteins as the content of a teaching unit aimed at students of Biology 2nd year: "Molecules organic: Proteins From the lab to the classroom Biochemistry Biology High School ". Among other teaching resources was used, first, the potential of this issue in the interaction Science-Technology and Society (STS) promoting debate and critical reflection of students on the basis of scientific knowledge and, second, the work of laboratory. Notwithstanding all this to take time to prepare the student to meet with guaranteed success to questions on the subject are asked in the entrance exam to the University, and which incorporate a brief study on the introduction to Learning Unit. This work is directed to conduct a study of biochemistry, from the earliest advances and discoveries in the nineteenth century to the latest developments of the twenty- first century. One CTS interaction is the protein diet Dukan, from which we can know the advantages and disadvantages that it has given rise to a debate where each student will present their own conclusions is also introduced. In this Learning unit we will introduce in the laboratory for learning how a protein is denatured, as it is a simple and interesting experiment, so that students do not find this particular subject or science in general as something abstract. Finally finish with the completion of a learning unit where it is intended that the students learn the necessary skills required in the PAU tests and their importance in everyday life.
