Resumen
La evolución de la Industria Química aplicada a distintos sectores ha dado lugar a numerosos
compuestos químicos muy útiles para el sector agroalimentario, pero que en altas concentraciones
puede resultar dañino para el Medio Ambiente y los seres vivos. Dado el aumento de las
concentraciones de dichos compuestos en el ambiente y su capacidad para alterar las funciones
fisiológicas de los seres vivos, se han visto incrementados los estudios de éstos y sus interacciones con
el resto de compuestos fisiológicos intrínsecos. También destacar que son cada vez más los laboratorios
e instituciones públicas están preocupadas por la determinación de estos compuestos, con el fin de
obtener resultados de presencia o ausencia y concentraciones en alimentos, agua y seres vivos.
Este estudio se ha centrado en un alimento tan básico para la población como es la leche. El objetivo de
este ensayo es la realización de un estudio exhaustivo de las metodologías más recientes para la
determinación de contaminantes fenólicos en leche mediante técnicas cromatográficas acopladas a la
espectrometría de masas. En estos estudios se tendrá un principal interés en el tratamiento de la
muestra con el fin de aumentar la sensibilidad, selectividad, precisión y exactitud en la cuantificación de
este tipo de contaminantes.
The evolution of the Chemical Industry applied to different sectors has resulted in numerous chemical compounds that are very useful for the agri-food sector, but which in high concentrations can be harmful to the environment and living beings. The increased concentrations of these compounds in the environment and their ability to alter the physiological functions of living beings, their studies and interactions with other intrinsic physiological compounds have been increased. Many laboratories and public institutions are concerned about the determination of these compounds, in order to obtain results of presence or absence and concentrations in food, water and living beings. That is why this study has focused on a food as basic to the population as milk. The objective of this study is to conduct a comprehensive study of the latest methodologies for the determination of phenolic contaminants in milk by chromatographic techniques coupled with mass spectrometry. These studies will have a main interest in the treatment of the sample in order to increase sensitivity, selectivity, accuracy and accuracy in the quantification of this type of contaminants.
