[ES] En este trabajo se determinará la presencia y concentración de compuestos fenólicos y triterpenos pentacíclicos en aditivos presentes en piensos animales así como sus propiedades antioxidantes. Se determinará el contenido de fenoles totales, ácido maslínico, ácido oleanólico y uvaol. El objetivo es poder asegurar su uso comercial. El método de análisis utiliza técnicas como el ensayo de Folin-Ciocalteau
y HPLC/UV-Vis para la determinación fenólica y triterpénica remarcando la importancia de estos compuestos como suplementación de antioxidantes vegetales en piensos animales. Se concluye que estos aditivos presentan gran contenido en triterpénicos, destacando su potencial como agente antioxidante en
la industria alimentaria.
[EN] This study focuses on evaluating the bioactive compounds present in diets in which natural additives rich in polyphenols and triterpenes. These compounds have importance in health due to the benefits they provide in the prevention of chronic and cardiovascular diseases. The hypothesis suggests that food additives contain high concentrations of such as phenolic compounds and pentacyclic triterpenes that are very abundant in olive tree samples. The aim is the additive can be used in the market. In this work, its presence, concentration and antioxidant properties in additives present in animal feed will be determined. The concentration of total phenols and triterpenes such us oleanolic acid, maslinic acid and uvaol will be analysed. The analysis method uses techniques such as the Folin-Ciocalteau test and HPLC/UV-Vis. Concluding that the additive has a high content of triterpenes and a high potential as an antioxidant agent in the food industry.
