Resumen
[ES] El presente trabajo recoge una unidad didáctica, la cual forma parte del ciclo formativo de grado medio denominado Técnico en Aceites de Oliva y Vinos. Este título está enfocado a la formación de jóvenes para que les permita desarrollar una cualificación profesional a nivel internacional y para el desempeño de un puesto de trabajo dentro del sector oleícola. De los conocimientos impartidos a lo largo del ciclo formativo, la unidad de trabajo constituye la parte basada en los sistemas de extracción, perteneciente al módulo fundamentado en el proceso de obtención de Aceite de Oliva. Esta formación se va a impartir entre actividades teóricas y prácticas, potenciando el desarrollo de las habilidades prácticas, ya que se busca que el alumnado sea capaz de adquirir experiencia y de aportar mejoras en el proceso de obtención del Aceite de Oliva.
[EN] This work presents a didactic unit, which is part of the intermediate level training course named Técnico en Aceites de Oliva y Vinos. This title is focused on the training of young people to enable them to develop a professional qualification internationally, which allow them to perform a job in the olive sector. Among all the taught knowledge during the training course, the didactic unit is the part based on extraction systems, belonging to the module about the process of obtaining olive oil. This training will be imparted with theoretical and practical activities, which are going to strengthen the development of practical skills, as it is intended that students will be able to gain experience as well as providing improvements in the process of obtaining olive oil.
