“Estudio de la presencia de metales pesados en conservas de aceituna”.

Abstract

El objetivo de este estudio ha sido la determinación de cuatro elementos tóxicos (As, Cd, Sb, Pb) y dos elementos trazas (Fe y Sn) contenidos en conservas de aceitunas de mesa envasadas en PET y hojalata. Estas muestras fueron sometidas a distintos tratamientos térmicos (40 o C, 60 o C, 70 o C) durante dos y tres semanas. La determinación cuantitativa de estos metales se llevó a cabo por ICP-MS. Los resultados obtenidos de concentración de los metales pesados con los Límites Máximos Establecidos por la legislación vigente para dichos metales. Al mismo tiempo se ha realizado también una revisión bibliográfica para conocer la contaminación de alimentos por metales pesados.

[EN] The objective of this study is the determination of four toxic elements (As, Cd, Sb, Pb) and two trace elements (Fe and Sn) in table olives packed in PET and tin cans. After having undergone a heat treatment (40 oC, 60 oC, 70 oC) during two and three weeks a quantitative determination of these elements was carried out by ICP-MS. The results obtained were compared with the Maximum Limits Established by the current legislation for the above mentioned metals. At the same time a bibliographical review has been realized to know the food contamination by heavy metals.
