[es] Para la realización de este estudio de investigación, se han seleccionado cuatro tipos de aceites de oliva que se encuentran a la venta en las principales cadenas de supermercados. De acuerdo con su etiquetado, corresponden a los siguientes tipos de aceite: refinado, virgen, virgen extra y virgen extra de cosecha temprana, siendo el aceite de oliva refinado la principal referencia de este presente estudio.
A cada uno de estos tipos de aceite de oliva se le determinaron los parámetros de calidad
reglamentada (índice de acidez, índice de peróxidos, medida del coeficiente de extinción molar K232 y K270).
Debido a la riqueza de antioxidantes naturales del aceite de oliva virgen, se ha determinado pigmentos fotosintéticos, polifenoles totales, ortodifenoles y capacidad antioxidante.
Los parámetros de calidad reglamentada obtenidos para las muestras estudiadas se han comparado con la legislación vigente, mientras que las determinaciones de antioxidantes y capacidad antioxidante nos ha llevado a conocer, en parte el contenido de estos compuestos en los aceites de oliva virgen que pueden ser adquiridos en los lineales de los supermercados.
[en] To carry out this research study, four types of olive oils have been selected for sale in the main supermarket chains. According to their labelling, these belonged to the following types of oil: refined, virgin, extra virgin and early harvest extra virgin, with refined olive oil being the main reference of this study. For each of these types of olive oil, the regulated quality parameters (acidity index, peroxide index, molar extinction coefficient measurement K232 and K270) were determined. Due to the richness of natural antioxidants of virgin olive oil, photosynthetic pigments, photosynthetic pigments, total polyphenols, orthodifenols and antioxidant capacity have been determined. The parameters of regulated quality obtained for the samples studied have been compared with the current legislation, while the determinations of antioxidants and antioxidant capacity have led us to know, in part the content of these compounds in virgin olive oils that can be purchased in the lines of supermarkets.
