Resumen
El sector del aceite de oliva ha significado desde hace décadas
para nuestro país una marca de referencia y una herramienta de
sustento económico y de expansión en cuanto al mercado exterior.
Se produce cada año una media en torno a 1.200.000 toneladas de
aceite, lo que representa el 40% de la producción mundial, en gran
parte debido a la tradición olivarera y favorables factores
productivos del país. La gran envergadura de dicho sector en
España nos ha llevado a indagar en el análisis de eficiencia de las
almazaras de aceite de oliva españolas. El análisis empírico se
llevará a cabo mediante el método del análisis envolvente de datos
(DEA), centrándose de manera más precisa en la zona de
Andalucía, comunidad autónoma de la que procede el mayor
porcentaje de producción del país.
For decades, the olive oil sector has been a reference brand and a tool for economic support in our country and, furthermore, it contributes to its expansion in terms of the foreign market. On average about 1,200,000 tons of oil are produced per year, which represents 40% of world production, mainly due to the large olive- growing tradition and the favourable production factors in the country. The large size of this sector in Spain has led us to research the efficiency analysis of Spanish olive oil mills. The empirical analysis will be carried out using the data envelopment analysis (DEA) method, focusing more precisely on the area of Andalusia, the autonomous community where the highest percentage of production in the country comes from.
