Resumen
[ES]Los triterpenos pentacíclicos son metabolitos secundarios localizados
ampliamente en numerosas especies del Reino Vegetal. Se trata de compuestos
presentes en altas concentraciones en órganos y productos derivados del olivo, por
tanto, muy abundantes en la dieta mediterránea. Nuestro estudio se basará
fundamentalmente en los triterpenos encontrados en hojas, aceitunas y aceite de
Olea europaea. Los triterpenos pentacíclicos presentan propiedades anti-tumorales,
modulan el metabolismo glucídico y lipídico, propiedades cardiovasculares, antiinflamatorias,
anti-parasitarias, etc. Actualmente se encuentran en el punto de mira
de múltiples estudios ya que, debido a su gran actividad biológica en diversos
campos, están siendo considerados como productos naturales que pueden sustituir
o complementar la acción de fármacos convencionales en el tratamiento de diversas
patologías.
[EN]Pentacyclic triterpenes are secondary metabolites widely localized in many species of the plant kingdom. These compounds are found in high concentration in organs and olive products, therefore, they are very abundant in the Mediterranean diet. Our study will be based on triterpenes found in leaves, olives and oil from Olea europaea. Pentacyclic triterpenes have anti-tumor properties, modulate lipid and glucose metabolism, cardiovascular properties, anti-parasitic, anti-inflammatory, etc. They are currently in the focus of many studies since, due to its high biological activity in various fields, are being considered as natural products that can replace or supplement the action of conventional drugs in the treatment of various diseases.
