Resumen
El presente Trabajo Fin de Máster, tiene como objetivo estudiar cómo ha sido la calidad de la campaña de la aceituna 2019/2020 en dos provincias, la de Jaén y la de Extremadura. Se parte de muestras de aceituna de las provincias de Jaén y Extremadura, así como muestras de aceite de la provincia de Jaén. Las muestras se recibieron y estudiaron en el Laboratorio Unaproliva, ubicado en la provincia de Jaén. Sobre las muestras de aceituna, se determinaron la humedad y rendimiento graso en materia seca. Para las muestras de aceite se realizaron los análisis de calidad recogidos en el Reglamento no 2568/1991 (índice de acidez, índice de peróxidos, coeficiente en el ultravioleta, impurezas y humedad) Los resultados obtenidos en el laboratorio para los diferentes parámetros evaluados, se compararon con otros estudios para ver si existían diferencias y determinar el progreso obtenido de esta campaña.
