Nutrición hospitalaria y dietas específicas para pacientes con hipertensión arterial.

Abstract

[ES] El objetivo principal del presente trabajo es analizar la atención dietética y nutricional en los hospitales andaluces. Este análisis incluye las funciones de la unidad de Bromatología y sus principales servicios, las dietas hospitalarias y menús diarios del hospital. La hipertensión es hoy en día uno de los problemas de salud más frecuentes en los países desarrollados. Los factores de riesgo incluyen hábitos alimenticios (alto consumo de sal, tomar gran cantidad de grasas saturadas y colesterol, bajo consumo de frutas y verduras), inactividad física, abuso de tabaco y alcohol, y el desarrollo de sobrepeso u obesidad. Los principales patrones dietéticos utilizados durante el tratamiento de sujetos hipertensos son el DASH y la Dieta Mediterránea, que han demostrado ser útiles en el control de la tensión arterial junto con el tratamiento farmacológico.

[EN] The main objective of the present study was to analyze the dietetic and nutricion care into Andalusian Hospitals. This analysis includes the functions of the Bromatology unit and its main services, legislations, daily hospital diets and menus. Hypertension is nowadays one of the most prevalent health problems in the developed countries. Risk factors include dietary habits (high salt intake, consumption of saturated fatty acids and cholesterol, low intake of fruits and vegetables), physical inactivity, tobacco and alcohol abuse, and the development of overweight or obesity. The main dietary patterns used during the treatment of hypertensive subjects are the DASH and the Mediterranean Diet, that have been shown to be useful in the control of blood pressure together with pharmacological treatment.
