Resumen
[ES] La dieta mediterránea es un estilo de vida saludable, en el cual no solo promueve
el consumo de determinados alimentos, sino que abarca costumbres, recetas y
la adopción de hábitos saludables. Tiene grandes beneficios a nivel
cardiovascular, y en la prevención y tratamiento de patologías como la Obesidad,
Cáncer, Diabetes o Alzheimer.
La dieta mediterránea incluye grandes cantidades de alimentos ricos en
polifenoles. Los polifenoles son compuestos bioactivos que se encuentran en
los vegetales y muchos de los efectos de estos polifenoles son consecuencia de
sus propiedades antioxidantes.
Este trabajo tiene como objetivos, diseñar un cuestionario online que nos permita
obtener información sobre la ingesta de polifenoles, estimar la ingesta total de
polifenoles en la dieta usando la información proporcionada por la base de datos
phenol-explorer y analizar los hábitos dietéticos (especialmente a los grupos de
alimentos ricos en polifenoles) de una muestra de la población de Jaén.
[EN] The Mediterranean diet is a healthy lifestyle, which not only promotes the consumption of certain foods, but also involves customs, recipes and the adoption of healthy habits. It has a number of benefits at cardiovascular level, as well as in the prevention and treatment of pathologies such as Obesity, Cancer, Diabetes or Alzheimer. The mediterranean diet includes food rich in polyphenols. The polyphenols are bioactive molecules which can be found in vegetables and many of their effects are a consequence of their antioxidant properties. The aim of this work is to design an online questionnaire that will allow us to obtain information about the intake of polyphenols, estimate the total intake of polyphenols in the diet using the information provided by the phenol-explorer database and analyze dietary habits (especially groups of foods rich in polyphenols) from a sample population of Jaén.
