Protected Designations of Origin (PDO) and Protected Geographical Indications (PGI) constitute the system used in the EU for the recognition of a differentiated quality. The strict traceability controls mean an improvement in food safety and higher competitiveness in the markets. Likewise, they promote the recognition of the identity and singularities of a territory, encouraging its producers to contribute to the conservation of the environment and the endogenous characteristics of rural spaces. In this work, the representativeness of PDOs in the Spanish olive oil sector is analyzed, with special reference to the region of Jaen, its relative position in the entire national agricultural sector with PDO/PGI is investigated and its commercialization structure is identified, differentiating between national and international market. Finally, a practical case is presented that analyzes the current situation of a olive-growing company in the region of Jaen.
