Resumen
[ES] Las enfermedades cardiovasculares representan un gran problema de salud, siendo la
principal causa de muerte a día de hoy. La alimentación es uno de los principales factores que
influyen sobre el riesgo cardiovascular, junto con tabaquismo y sedentarismo. Los beneficios
de la dieta mediterránea atienden en gran parte a sus efectos beneficiosos y preventivos en la
formación de la placa arteriosclerótica en la pared de las arterias, que constituye la base de
dichas enfermedades. En este trabajo de revisión se trata de estudiar las influencias que tiene
el patrón dietético mediterráneo sobre la salud cardiovascular desde el punto de vista
bioquímico. Se lleva a cabo una búsqueda bibliográfica de los artículos científicos que tratan
esta relación, en las principales bases de datos sobre salud. En los artículos encontrados se
hayan grandes beneficios del patrón alimentario gracias a ciertos componentes como los
ácidos grasos insaturados y otros con gran capacidad antioxidante, que hacen de la dieta
mediterránea una de las mejores herramientas para luchar contra el riesgo cardiovascular.

[EN] Cardiovascular diseases represent a large health problem, being the leading cause of death today. Food is one of the main factors which influence on cardiovascular risk, along with smoking and physical inactivity. The benefits of the Mediterranean diet cater largely to its beneficial and preventive effects on the formation of atherosclerosis plaque in the wall of the arteries, which constitutes the basis of these diseases. In this review work we try to study the influences that the Mediterranean dietary pattern on cardiovascular health has from the biochemical point of view. We carry out a literature search of scientific articles dealing with this relationship, in the major databases on health. Found articles is corroborated the benefits of pattern food thanks to certain components as unsaturated fatty acids and others with high antioxidant capacity, that make the Mediterranean diet one of better tools to combat cardiovascular risk.
