Analizando el sector desde distintas perspectivas, se analizarán temas fundamentales como las tecnologías aplicadas al proceso productivo, las certificaciones y sistemas integrados de calidad, la evolución e impacto del cambio climático en los cultivos, las políticas agrarias y comerciales, además del papel que juega la innovación e investigación en este sector.The aim of this work is to carry out an exhaustive analysis of the olive oil sector in Spain, examining its historical, economic, social and ecological aspects. An investigation of the industrial and technological policy of the sector will be carried out, observing the factors that have made possible its development and evolution over the years.
