Resumen
[ES]La importancia que tiene el aceite de oliva en diversos aspectos clave como son la
salud, la gastronomía, el crecimiento económico y el medioambiente lo sitúan como
uno de los productos tradicionales más punteros de los últimos tiempos. El momento
de esplendor que está viviendo el sector oleícola se hace cada vez más destacado,
sobre todo en su proceso productivo, situándolo en una posición privilegiada con
respecto a la de otros sectores.
El presente trabajo, aborda diversos aspectos relacionados con el sector olivarero y
su producto estrella, el aceite de oliva. De esta manera, se explica la importancia de
este sector en Jaén, seguido de las cuantiosas propiedades, tratadas desde tiempos
inmemorables, presentes en el aceite de oliva. Posteriormente, se desarrolla la
mecanización experimentada en su proceso productivo y la aparición de un nuevo tipo
de turismo, oleoturismo, relacionado con dicho sector.

[EN]The importance of the olive oil in various key aspects, such as health, gastronomy, economic growth and environment, places it as one of the most leading traditional products of the late times. The brilliant moment of the olive sector is increasingly evident, especially in its productive process; placing it in a privileged position with respect to other sectors. The present project deals with various aspects related to the olive sector and its leading product: the olive oil. In this way, the importance of this sector in Jaen and the numerous characteristics of the olive oil (treated since inmemorial times) are explained. Later, the mechanisation experienced in its productive process and the appearance of a new type of tourism related to this sector (olive oil tourism) are developed.
