ESTUDIO COMPARATIVO DE LA PRESENCIA DE METALES PESADOS EN ACEITES VEGETALES COMESTIBLES

Abstract

[ES] Actualmente, los procesos de obtención, producción y consumo de alimentos suponen nuevos desafíos para la Seguridad Alimentaria. La presencia de metales pesados en aceites vegetales comestibles, conlleva efectos nocivos para el ser humano. En el presente estudio, se analizan aquellos artículos científicos que han determinado el contenido de metales pesados en diferentes tipos de aceites vegetales. Para ello, se ha llevado a cabo una revisión bibliográfica consultando bases de datos científicas y se han recopilado datos de los artículos seleccionados, bajo diferentes criterios. De esta forma, se ha establecido qué metales pesados y qué aceites vegetales comestibles son los más analizados, qué técnicas analíticas son las más empleadas y qué países concentran un mayor número de estudios. Asimismo, se ha comprobado que los aceites de oliva son los aceites más analizados en cuanto a la presencia de metales pesados.

[EN] Today, the processes of obtaining, producing and consuming food pose new challenges for Food Security. The presence of heavy metals in edible vegetable oils has harmful effects on humans. In the present study, those scientific papers that have determined the content of heavy metals in different types of vegetable oils are analyzed. For this purpose, a bibliographic review has been carried out by consulting scientific databases and data have been collected from the selected articles, under different methods. In this way, it has been established which heavy metals and edible vegetable oils are the most analysed, which analytical techniques are the most used and which countries concentrate a greater number of studies. It has also been found that olive oils are the most analysed oils in terms of the presence of heavy metals.
