ESTUDIO Y CLASIFICACIÓN DE LA APLICACIÓN DE SENSORES EN LOS ENVASES ALIMENTARIOS

Abstract

[ES] En las últimas décadas, una de las innovaciones más importantes que se han desarrollado en el área del envasado de alimentos ha sido el denominado “activo e inteligente”, basado en la interacción entre el alimento y la atmósfera que lo envuelve. La aparición de los sistemas de embalaje inteligentes ha contribuido a un cambio significativo en la percepción existente del embalaje, ya que transforman las funciones de comunicación tradicionales del embalaje en comunicaciones inteligentes, e interactúan con el consumidor en términos de su capacidad para detectar cambios en el entorno de los productos. En este trabajo se hace una revisión bibliográfica de los distintos tipos de envases inteligentes que se están desarrollando.

[EN] In recent decades, one of the most important innovations that have been developed in the area of food packaging has been the so-called "active and intelligent", based on the interaction between food and the atmosphere that surrounds it. The emergence of intelligent packaging systems has contributed to a significant change in the existing perception of packaging, as they transform the traditional communication functions of packaging into intelligent communications, and interact with the consumer in terms of their ability to detect changes in the products environment. The objective of this work is to makes a bibliographic review of the different types of smart packaging that are being developed.
